Cut the onions, carrots and celery into cubes and stew them in heated coconut oil. Once softened, add salt, pepper and broth. Bring to a boil, then add the peas and diced potatoes.
Peel a tomato and cut it into cubes, and chop the cauliflower into small pieces. Add all these vegetables once the potatoes are soft. Let them cook for a few minutes.
At the end you can sprinkle with chopped parsley.
